Handling and packaging meat in a number of different ways with a Master Butcher to consider the most appropriate way to pack meat products to maximise shelf life and enhance presentation and quality. Different packaging techniques and materials, including vacuum packing, over wrapping, use of trays, meat pads and labels will all be covered and you will be able to try different methods yourself. The advantages and disadvantages of each method will be covered, including optimising meat presentation, shelf life, cost, common mistakes to avoid and legislative requirements including weights and measures, labelling & meat storage temperatures. HACCP training will be covered by an accredited trainer and an industry recognised certificate will be available for all participants upon completion. Training will cover the principles of HACCP to meet legislative requirements and allow attendees to develop a suitable HACCP plan for their own / future food business with a ready to use HACCP template, HACCP completion guide and model HACCP documents provided on CD.
